Shit, Dan. I wish I had something insightful to add. But this is a brilliantly condensed synopsis of a long subject that I share a very similar option on (ditto the pizza dough orientated algorithm).

Don't you think there's a need to make wine content more accessible, and fun? My old employer's soical is just endless, forgettable expensive bottles of wine with tasting notes. And it did really well. These two poles of wine conent are equally unappetising for me 🤮

Perfectly normal to add in sa bit of Chardonnay into DOC quality Prosecco. Also, some bottle fermented versions around, and perfectly legal.
